Today’s Meatless Monday – Five Grain Muffins
This recipe is really quick and easy but it is also really tasty and nutritious! It’s no secret that a diet rich in whole grains leads to positive health benefits since grains provide many nutrients that are vital for the health and maintenance of our bodies. I like spreading some jam on muffin and accompanying it with a cup of hot tea.
• 1 cup 5 Grain Hot Cereal
• 1-1/4 cups Buttermilk
• 1/2 cup Brown Sugar
• 1 large Egg
• 1/3 cup Butter
• 1 cup Whole Wheat Pastry Flour
• 1 tsp Baking Powder
• 1 tsp Baking Soda
• 1 tsp Salt
1. Mix 5 Grain Cereal and buttermilk; allow to stand for 10 minutes while preheating oven and assembling other ingredients; mix sugar, butter, and egg together. Add dry ingredients and buttermilk mixture. Stir only until mixed.
2. Spoon into greased muffin pan. Bake at 400°F for 15 minutes.
