Barley with Mushrooms

Barley is a wonderfully versatile grain! It is not used very often, because most people are not familiar with it. This whole grain cereal is very nutritious, especially for vegetarians because of its high protein content. It is also very rich in minerals such as iron, sulfur, copper, zinc, manganese, chromium, selenium, iodine and molybdenum.


Ingredients for barley:

  • 2 cups water
  • 2/3 garlic clove
  • 2/3 bay leaf
  • 2/3 fresh thyme
  • 1/2 teaspoon salt
  • 2/3 cup barley

Ingredients for the mushrooms:

  •  2/3 tbsp olive oil
  • 1/4 chopped white onion
  • 150 g mushrooms
  • salt, to taste
  1. Heat water in a large pot with salt, herbs and garlic. When the water starts to boil, add barley, cover, reduce heat and continue to cook for 30 minutes.
  2. Remove the herbs and the garlic clove with tongs. Drain the barley over the sink. Return barley to the pot without additional water. Cover and let stand 10 minutes.
  3. In the meantime, place a frying pan on the stove with olive oil. Add chopped onion and cook for a couple of minutes, until translucent.
  4. Add the sliced ​​mushrooms to the frying pan and continue cooking 5 more minutes, until soft. Season with salt.
  5. Mix mushrooms with barley.
