Meatless Monday

Chickpea Salad


Last week my husband and I wanted to have something different for dinner but we didn’t feel like spending a lot of time in the kitchen. So we decided to innovate with something fresh and easy to make. We came out with this great nutritious salad, which is perfect for a Meatless Monday!

Ingredients: (2 servings)

  • ½ can of chickpeas, rinsed and drained
  • Mixed greens
  • ½ chopped cucumber
  • 1 chopped celery
  • 1 chopped tomato
  • 1 chopped small red onion


  • 3-lemon juice
  • 2 spoons of olive oil
  • 1/2 teaspoon of honey
  • 1 teaspoon of Dijon mustard
  • Salt and pepper


Combine chickpeas with cucumber, celery, tomatoes and mixed greens in a medium bowl. Pour dressing into salad.
