Meatless Monday: Watermelon salad with Mint

Summer, you got me. When its this hot and humid in DC, I tend to experiment more with salads than I normally would. This is a recipe of my personal favorites, because its easy to make, light to the stomach and oh-so yummie. The colors of all the ingredients make it a party on your plate (the picture below was my plate!), and its always a big vegetarian hit at BBQ parties! Vegans: you can modify the salad by replacing the cheese for a vegan option.  Enjoy!

INGREDIENTS:

  • Watermelon (1/2)
  • Drizzle of Olive Oil
  • Red Onion (1/2)
  • Feta or Goat Cheese (handful, crumbled)
  • Mint (about 4 sprigs, use only the leaves)
  • Arugula or Mache (handful)
